I've been trying to make an effort to eat healthily and while I can eat three healthy meals a day, I really struggle to find something sweet and tasty to snack on that won't cost me a weeks worth of calories or fat content. This is a healthy twist on traditional chocolate chip muffins that you can enjoy as much as you like without feeling guilty afterwards.
Ingredients:
- 1 ripe banana
- 1 egg
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 30g brown sugar
- 80g chocolate chips
- 235g rolled oats
- 115g plain Greek yoghurt
Method:
Pre-heat the oven to 180 C (fan assisted), and grease a muffin tray with a light spread or oil spray. For this recipe I made six medium sized muffins and two slightly smaller ones with the leftover mixture.
If you have a big enough food processor or blender, simply add all of the ingredients except the chocolate chips, and blend until the mixture is smooth and creamy. Then, gradually stir in the chocolate chips by hand and pour the mixture evenly directly onto the muffin tray.
For a smaller blender, you have to add the ingredients in one at a time. I ground down the oats first until they had reached a flour-like consistency, then gradually added the other dry ingredients. After that has wisked together, add in the banana, egg, and yoghurt, and continue to blend until the batter is smooth and creamy. As with the previous instructions, add the chocolate chips and you're ready to go.
Place the muffins into the oven and bake for 15-20 minutes or until a toothpick comes out clean when inserted into the centre. I actually cooked mine for closer to 25 minutes as the toothpick wasn't coming out clean until then and in hindsight this was too long.
Once your muffins are cooked, allow them to cool for 10 minutes before placing on a cooling rack.
Like I said before, these muffins are much more dense than traditional muffins but they're super filling and give you a sweet kick without the guilt of a regular chocolate muffin.
You could also switch up the recipe a bit to make it even more healthy and add dried fruit such as cranberries or any nuts (walnuts work well!) instead of the chocolate chips.
